Molasses Bars (dairy free and egg free)



As I strive to make healthy choices for my family I also want to make sure the kids have something special to munch on during the week.  These bars are made with whole wheat flour, very little sugar, and are Mommy Acceptable (which means I won't break out in hives).

Molasses Bars
Cream together:
1/2 cup Earth Balance Buttery Sticks
1/4 cup coconut oil
1/3 cup brown sugar

Then add:
1/4 cup applesauce
1/2 cup molasses
1/4 cup soy milk

Sift together in separate bowl:
1 cup whole wheat flour
1 and 1/4 cup unbleached white flour
1 tsp. baking soda
2 tsp ginger
3/4 tsp cinnamon
1/2 tsp cloves

Add flour mixture slowly to wet ingredients.  Pour into 8" square pan. Bake at 350 degrees for 12 to 15 minutes or until golden.  Cut into bars and cool on wire rack.  makes 15 bars.  Enjoy!
